Olive oil is a liquid fat obtained from olives, a traditional tree crop of the Mediterranean Basin. The oil is produced by pressing whole olives. It is commonly used in cooking, whether for frying or as a salad dressing. It is also used in cosmetics, pharmaceuticals, and soaps, and as a fuel source for traditional oil lamps, and has additional uses in some religions.
The production process usually follows the following sequence:
1. Grinding
2. Smoothie
3. Horizontal centrifugation
4. Vertical centrifugation
5. Storage and packaging

The two-phase system generates two types of waste: wastewater and alperujo. The waters
residuals from vertical washing and centrifugal processes, from cleaning tanks, hoppers
and other elements. This waste does not comply with the regulations to be discharged to the public waterway, nor can it be used for irrigation due to its high pollutant load.
